Crock Pot Linkup: Pumpkin Bread

It's time for the November Crock Pot recipe. 

This will have your mouth watering and leave your house smelling amazing! The bread has an enticing holiday flavor and is incredibly moist.



Ingredients:

1/2 cup oil
1/2 cup granulated sugar
1/2 cup brown sugar (tightly packed)
2 eggs (beaten)
1 can of pumpkin 
1 1/2 cups flour (sifted)
1/4 tsp. salt
1/2 tsp. cinnamon
1/2 tsp. nutmeg
1 tsp. baking soda

Directions:

1. In a large bowl, blend the oils and sugars together.
2. Stir in eggs and can of pumpkin. 
3. Add the remaining dry ingredients and mix well.
4. Pour the batter into a greased loaf pan (make sure the pan fits into your Crock Pot.)
5. Add two cups of water to the Crock Pot.
6. Place loaf pan inside Crock Pot and cover the top of the pot with 8-10 paper towels.*
7. Place the lid on top of the Crock Pot, making sure that the paper towels are secure.
8. Cook on high for 2 1/2 to 3 hours.

*Placing the paper towels on top of the Crock Pot is vital or the bread will become too mushy. Make sure they are on the top of the pot, not on top of the bread. The lid will act as a lock, to secure it in place.

Crock Pot Recipe Link-up: Turkey Pumpkin Chili

Fall is here! 

To welcome it's arrival, I made Turkey Pumpkin Chili in my slow cooker. The pumpkin is very delicate in flavor; not overly sweet, but adds heartiness and a beautiful hue to the chili. 

While some meats can go directly into your slow cooker, turkey has to be cooked and seasoned beforehand. As you will see below, after cooking my turkey, I always run in through my food processor. I like a lot of flavor in my meat and since turkey is hard to break up finely, I find that this extra step allows allows the flavors to truly saturate the meat. You can skip this step and just break up your turkey with spoon.

These ingredients do not add exceptional heat, but you can kick it up by adding some cayenne pepper or chopped jalapenos. Depending on your household size, you might have quite a bit of leftovers, but 
not to worry...it freezes great! 

Ingredients:



  • Cooking spray (I use Pam)
  • 2 pounds 99% lean turkey (I use white turkey breast)
  • 1/2 tsp. olive oil
  • 1 small onion, chopped
  • 3 garlic cloves, minced 
  • 1 1/2 tsp. chili powder (add more to taste)
  • 2 bay leaves
  • 2 1/2 tsp. cumin
  • 2 tsp. onion powder
  • 1 tsp. oregano
  • salt and pepper, to taste
  • 2 (15 oz.) cans white northern/navy beans, drained 
  • 15 oz. can pumpkin puree (not pumpkin pie filling)
  • 2 (4.5 oz.) cans diced green chilies
  • 2 cups (1 can) low-sodium, fat free chicken broth
  • Fat free sour cream (optional)
  • Chopped cilantro (optional)
  • Monterey jack cheese, shredded (optional)
  • Crushed tortilla chips (optional)

Directions:

Heat a large frying pan over high heat and lightly mist with your cooking spray. Add the turkey meat, breaking up with a wooden spoon until meat is thoroughly cooked (about 5 minutes.)



If desired, placed cooked turkey meat into a food processor. Pulse for a few seconds until meat in finely ground up. 

Transfer the turkey back to the frying pan and add your olive oil. Stir in the garlic and chopped onion. Mix well and saute for 3-4 minutes. Every cook has their preferences. One of mine is using Christopher Ranch chopped garlic in water. 2 tsp. = 1 garlic clove.



Next, add your cumin and onion powder and saute another minute or so.


Take your turkey and onion mixture and pour into the slow cooker. Add your beans to the meat. I always rinse my beans to lessen the sodium content.


After the beans, add the pumpkin puree, diced green chilies, chili powder, oregano, and bay leaves. 


Mix well, add salt and pepper to taste. At this point, I usually add more cumin, chili or onion powders. It is up your taste buds and level of desired spice flavor.


Once the chili is mixed well, cook on low for 8 hours or high for 4 hours. Top with your favorite toppings: cilantro (this can also be added when cooking.) shredded jack cheese, sour cream, crushed tortilla chips, etc. This pairs well with cornbread and honey butter. The possibilities are endless!

Crock-Pot Chicken Taco Soup

Fall is the perfect time to get out the Slow Cooker and try new recipes. My friends at Dreaming of DimplesIn the Pink and Green, and left brain, right brain, pug brain, started a Crock-Pot recipe exchange.


I have some favorite Crock-Pot recipes that I can't wait to share, but I am also excited to try some new ones.

This super easy Chicken Taco Soup is delicious and hearty. It is almost like a chili and very adaptable to your personal taste. The beer adds a great and unexpected flavor. I use what I have on hand, but a Pale Ale has been my favorite. Since this recipe calls for a lot of canned ingredients, I rinse all the beans and corn in a strainer to lessen the sodium content. If you are looking to cut calories, you can use low-fat cheese and low-fat or non-fat sour cream.

Ingredients
  • 1 onion, chopped
  • 1 (16 ounce) can chili beans
  • 1 (15 ounce) can black beans
  • 1 (15 ounce) can whole kernel corn, drained
  • 1 (8 ounce) can tomato sauce
  • 1 (12 fluid ounce) can or bottle beer
  • 2 (10 ounce) cans diced tomatoes with green chilies, not drained
  • 1 (1.25 ounce) package taco seasoning
  • 3 whole skinless, boneless chicken breasts
  • Fresh cilantro (I use both in cooking and for garnish)
  • Shredded Cheddar cheese (optional)
  • Sour cream (optional)
  • Crushed tortilla chips (optional)


Directions

  1. Place the onion, cilantro, chili beans, black beans, corn, tomato sauce, beer, and diced tomatoes in a slow cooker. Add taco seasoning, and stir to blend. Lay chicken breasts on top of the mixture, pressing down slightly until just covered by the other ingredients. Set slow cooker for low heat, cover, and cook for 5 hours.
  2. Remove chicken breasts from the soup, and allow to cool long enough to be handled. Stir the shredded chicken back into the soup, and continue cooking for 2 hours. Serve topped with shredded Cheddar cheese, cilantro a dollop of sour cream, and crushed tortilla chips, if desired.

Very Pinteresting...

When the going gets tough...the tough go to PINTEREST?

Most everyone knows what Pinterest is, but for those few who still don't...Pinterest is a virtual pinboard. It allows you to pin anything you see online; be it recipes, clothing, hairstyles, jewelery, decorating ideas, everything kids, and so much more. Your possibilities are endless. While those who haven't experienced it may think it sounds strange; trust me, it is quite addicting. 

One of my personal favorite boards is Words of Wisdom. I created this board for inspiring quotes and positive life reminders. My last week has been tough and I have been looking at these quotes more often. When I am having a hard time, these literary phrases help me put things into a more positive perspective. They help iron out life's wrinkles.

Different, but the Same

Everyone has their daily rituals that iron out life's wrinkles. For me, my iron is reading. I love to immerse myself in a story; often, it's like a short vacation.

I recently discovered a trend in the books I most enjoy. I love books that are set in the South. Now, I am not from the South, nor have I been or desire to live there, but there is something about it that truly fascinates me.

Two of my favorite books that take place in the South are:



My most recent find, is a book my Book Club is reading called "Same Kind of Different as Me." This story intertwines two lives through the Christian faith. Now, I know you might be turned off by the sound of a Christian book, but this book is not about religion; it's about people. 

"Same Kind of Different as Me" tells the (true) story of Denver Moore, a former sharecropper turned homeless man; and Ron Hall, a Texas frat-boy turned art dealer. You might wonder what a homeless man and million-dollar art dealer have in common. Well, you'll have to read the story yourself to find out.

Their writing union paints picturesque memories that unfold before you. They make you realize that no matter what walk of life you are from; we are all truly homeless, as our place here is only temporary.

 Through southern plantations to the affluent life in Texas, they tell a beautiful story. Their story is sad, yet inspirational and if you haven't read it, I highly recommend it. A great reminder that we are all different, but the same.

Life isn't always how you plan it, but it's always what you make of it.

Keep on Dreaminn


J and I celebrated our eight year wedding anniversary on June 4. As a surprise, I took him to the beautiful Dream Inn in Santa Cruz. He didn't guess where we were headed until he saw the Highway 17 sign to Santa Cruz.

Although we only stayed one night, we had such a blast! Because it was our anniversary, we were upgraded to a "Cloud" level room; rooms on the highest floors. It was such a treat, as the views are phenomenal. You can hear the waves crashing and seals barking. If you haven't been to the Dream Inn, it's a place for your travel bucket list.

Our day was very relaxing. We walked to the Wharf and saw the seals. There were also a ton of jellyfish in the water. I thought it was the coolest thing ever, because I have only seen them at aquariums.

After the Wharf, we headed to Ideal Bar and Grill for lunch. It's right on the sand and truly is an "ideal" place for lunch. After lunch, we made our way to the beach boardwalk. I have not been there since I was in high school. It hasn't changed much, but still makes you feel like a kid. We walked the boardwalk and rode the Sky Ride - a fabulous way to view the scenery. I joked with J that we are getting old; looking for the rides that offer the best scenic view, not the most thrill.

We spent the remainder of the afternoon on our balcony and later had drinks there before dinner. We wanted to explore more of the area, so went to nearby Capitola for dinner. Always in the mood for Mexican, we settled at Margaritaville (not to be confused with Buffet's Margaritaville.) After dinner, we strolled along the Capitola strand and the full moon was cascading over the water. It was a spectacular sight. Our last Capitola stop was to Starz Cupcakes. The owner gave us several cupcakes for our anniversary and they were delicious! If you are in the area, treat yourself to a Salted Carmel or Triple Chocolate cupcake. You will not be disappointed.

Monday morning was a rainy day so we were thankful that the weather on Sunday was perfect. After a stop at Rip Curl, we drove up Highway 1 into San Francisco. We stopped in Sausalito at our favorite deli, Venice Gourmet and had lunch. It was a great way to end our trip.

So, here's to our ninth year together. I know we are both looking forward to what new adventures are in store. This is going to be an exciting year for us. It is the year that we hopefully become parents!
